Mushroom Fried Rice with Bell Pepper and veggies is a very easy-to-cook wholesome meal. The Aromatic aroma of Govindbhog Rice and the lovely flavour of homemade Desi Ghee take this fried rice to the next level. You can prepare this fried rice with other rice variants like long grain basmati rice, jasmine rice, jeera rice etc., and it will taste equally great. It’s a one-pot meal with rice and veggies. This fried rice is a great option for lunch, brunch or dinner and an excellent choice for tiffin or lunch box. Serve it with chilled cucumber raita and a glass of spiced buttermilk.  A must-try recipe if you have a fussy eater at home.

Ingredients
  

  • 2 cups Cooked Rice
  • 200 gm Mushroom
  • 1 small Onion
  • ¼ cup Red Bell Pepper
  • ¼ cup Yellow Bell Pepper
  • ¼ cup Capsicum
  • ½ tsp Chilli powder
  • ¼ tsp Turmeric Powder
  • Salt to taste
  • 2 tbsp Ghee

Instructions
 

  • Clean and rinse the mushrooms. Pat dry with a kitchen towel and cut the mushrooms in quarters. Keep it aside.
  • Melt ghee in the pan or kadhai on medium heat. Add finely chopped onion and sauté it for 2 minutes.
  • Add the mushrooms, turmeric powder, chilli powder and salt. Mix it well and cook for about 5-6 minutes on medium heat. The mushrooms will release water at the beginning of cooking. Stir frequently and cook the mushrooms until all the water gets dry.
  • Add finely chopped red bell pepper, yellow bell pepper and capsicum. Mix it well, stir frequently and cook for 2-3 minutes or until peppers are just tender. Do not overcook the bell peppers.
  • Add boiled rice and mix it gently with the mushroom and bell peppers.
  • Mushroom fried rice with bell peppers is ready to serve.
