Vratwale Sookhe Aloo is a vegetarian, gluten-free dry sabji made using potatoes, crushed peanuts and fresh herbs with a little hint of tanginess of lemon. You can serve it as a snack or side dish with puri or paratha on vrat (Hindu fasting) days. This delicious dry sabji is made using boiled potatoes, peanuts, herbs and a few spices that come together in 10 minutes using a few simple ingredients. This aloo or potato sabzi is a simple and delicious recipe without onion and garlic.
In India, the potato is a prevalent traditional staple. Potato is an integral part of different cuisines of India. It is used in savoury as well as sweet preparations. This dry aloo sabji is a quick preparation with minimal ingredients and tastes yum with hot puri. It is a fast and simple dish loaded with carbohydrates and gives you instant energy. This type of food gives you balanced nutrition and keeps you energetic during fasting days.
Potato gives instant energy to the body; hence, it is a perfect dish to serve as a snack on vrat (Hindu fasting) days. It has carbs, proteins, essential vitamins and fat to fuel up your body. This sabji goes well with fasting flatbreads like kuttu ka paratha, kuttu ki poori, rajgira paratha or rajgira puri.

Ingredients
  

  • 1 ½ tbsp Ghee
  • 1 tsp Cumin Seeds
  • 2 sprigs Curry Leaves
  • 2 Green Chillies , finely chopped
  • 1 tsp Ginger , finely chopped
  • 4 medium Boiled Potatoes
  • ½ cup Roasted Peanut
  • ½ tsp Black Pepper , crushed
  • 1 tbsp Lime Juice
  • ¼ cup Coriander Leaves
  • Sendha Namak (Rock Salt) To taste

Instructions
 

  • Peel and dice the potatoes. Set it aside.
  • Crush the roasted peanuts coarsely into a mortal & pestle or grinder. If you are using a grinder, then grind it with short pulses. Set it aside.
  • Heat the ghee in a Pan, then add Cumin Seeds, Curry Leaves, Green Chillies (chopped), and ginger).
  • Add Potatoes and sendha namak (rock salt) and mix it well. Cook it for 2-3 minutes until it turns slightly brown and crisp.
  • Add Peanuts and mix them well.
  • Add Lime Juice, crushed black pepper and Coriander Leaves. Mix it well and turn off the flame.
  • Vratwale Sookhe Aloo is ready to serve. Serve it hot with puri or paratha.
