Sabudana Waffles

Sabudana waffles is a delicious and healthier twist to the famous sabudana vada. These delicate, tasty waffles are made with soaked sabudana and boiled potatoes, spiced with ginger and green chillies and some basic spices to elevate the taste. Adding fresh herbs like coriander and curry leaves brings a fresh aroma to the waffles. The crunchy and nutty peanuts add to the waffles' taste and texture and take it to the next level.
Sago (tapioca pearls), also known as sabudana in Hindi, which is sold in the market as small bead-like balls, is a processed and easily digestible food made of starch and a rich source of carbohydrates. It is a gluten-free, plant-based food.
Sabudana vada is a traditional and popular Indian dish made from soaked sabudana or sago (tapioca pearls), potatoes, roasted peanuts, fresh curry leaves and a few spices. This famous recipe is the most prevalent dish during fasting days or Hindu festivals like Navratri, Mahashivratri, and Ekadashi.
These waffles are full of flavours. It is made with minimal spices but still tastes so good. It has the freshness of curry leaves and coriander leaves, the crunch of roasted peanuts and a zing of zesty lemon juice.
It is a well-balanced food during vrats or fastings. Instead of using the traditional method, this recipe uses minimal ghee to make it more healthy. These waffles keep you full and energised for a long time without any guilt. Serve it with green chutney or ketchup.

Ingredients
  

  • 1 cup Sabudana (Sago pearls)
  • 4 medium Boiled Potatoes
  • ½ cup Roasted Peanuts , coarsely crushed
  • 1 tbsp Ginger , grated
  • 2 Green Chilli , finely chopped
  • 4 tbsp, heaped Coriander leaves , finely chopped
  • 8-10 Curry leaves , finely chopped
  • 1 tsp Roasted Jeera Powder
  • ½ tsp Black Pepper Powder
  • 1 tsp Sugar (optional)
  • 1 tbsp Lemon juice
  • Sendha Namak to taste (Rock salt)
  • Ghee or oil For greasing

Instructions
 

  • Clean and rinse the sabudana 3-4 times and soak it in 1 cup of water overnight or at least 5-6 hours.
  • After 5 hours, check if the sabudana has soaked well enough and softened by pressing some pearls. If it is mashed easily, it means it is perfectly soaked. If you feel some hardness in the centre of the pearls, then add a few tablespoons of water to the bowl. Cover and leave to soak for another 30 minutes.
  • Strain the sabudana in a colander and keep it aside.
  • Take a big mixing bowl and add boiled grated potatoes, crushed roasted peanuts, ginger, green chilli, coriander leaves, curry leaves, roasted cumin powder, black pepper powder, lemon juice, sugar and sendha namak. Mix it well.
  • Combine and mash the mixture well with your hands, and adjust the spices and seasoning according to your taste. Divide the mixture equally, wet your hands and roll it into balls. Keep it aside.
  • Heat the waffle maker and brush with ghee or peanut oil.
  • Now, add the prepared ball to the waffle maker. Press it down gently and evenly from all sides. Brush it with ghee on the top of the waffles.
  • Close the waffle maker. Let it cook for 8-10 minutes, until crisp and golden. Take it out gently using a spatula. Repeat the same process to make all the sabudana waffles.
  • Sabudana waffles are ready to serve. Serve it hot with green chutney or tomato ketchup.
