Crispy, crunchy and chewy, these coconut cookies will melt in your mouth and will satisfy your sweet cravings. Making eggless coconut cookies at home is very easy and is not as difficult as it sounds. It can be easily made with little effort and a handful of ingredients. The traditional method of preparing Coconut Cookies includes eggs; however, this is an eggless version. To prepare this recipe, all you need are simple ingredients that you can easily find in your pantry. To make these cookies, you need Unsweetened desiccated coconut, all-purpose flour, milk, butter, sugar and vanilla essence. It is a perfect teatime snack and can be stored for days in an airtight container.

Ingredients
  

  • ¾ cup Unsweetened Desiccated Coconut
  • ½ cup Unsalted Butter
  • ½ cup Caster Sugar
  • 1 cup All-purpose flour (Maida)
  • ½ tsp Baking Powder
  • ½ tsp Vanilla essence
  • 1 tbsp Milk
  • ¼ tsp Salt

Instructions
 

  • Preheat the oven to 180 C. Line the baking tray with parchment paper or grease it with butter; keep it aside.
  • Take a bowl, add butter (preferably at room temperature) and castor sugar. Whisk together butter and sugar till light and fluffy.
  • Add vanilla essence and mix it well.
  • Sift together flour, baking powder and salt. Fold the dry ingredients with a spatula and mix them well with butter and sugar mixture.
  • Add desiccated coconut and mix it well. Combine the dough (don’t knead the cookie dough), add milk and make a smooth dough.
  • Take a tablespoon of cookie dough, roll it into small balls, flatten it with your fingertips into medium-sized rounds, and place them on the baking tray, leaving a gap for 2 inches between each cookie.
  • Bake into the preheated oven for 12-15 minutes or till the edges start browning.
  • Remove from the oven, let it cool down completely on the wire rack.
  • Serve the cookies and store them in an airtight container.
