Broccoli Paratha is a delicious and nutritious stuffed paratha that is loaded with the goodness of broccoli. Broccoli is considered one of the most nutritious vegetables. It is a good source of fibre and protein and contains iron, potassium, calcium, selenium, magnesium, vitamins, and folic acid. It is also a good source of beta-carotene and is low in calories - no doubt that's why broccoli is considered a super food.
This delicious paratha is made with whole wheat flour and stuffed with the hearty filling of broccoli, potato and some basic spices. It is an excellent option for breakfast, brunch, lunch, or dinner and is a great way to sneak this superfood into your family’s diet. Serve it with curd and pickle. Additional of a glass of chilled buttermilk will be heavenly.

Ingredients
  

For Dough

  • 2 cups Whole Wheat Flour
  • ½ tsp Salt
  • 1 tbsp Oil
  • ¾ cup Water

For Stuffing

  • 2 cups Broccoli grated
  • 1 tsp Oil
  • 1 Onion finely chopped
  • 2 Garlic Cloves chopped
  • 1 tsp Salt
  • ¼ tsp Turmeric Powder
  • ½ tsp Red Chilli Powder
  • ½ tsp Coriander Powder
  • ½ tsp Cumin Powder
  • 1 tsp Amchur Powder
  • ½ tsp Garam Masala Powder
  • 2 Boiled Potato grated
  • Wheat Flour for rolling
  • Ghee for roasting

  • Firstly, prepare the dough for the paratha. Take a large mixing bowl, add 2 cups of whole wheat flour, oil and salt.
  • Use your fingers, stir in the salt and oil into the flour. Mix it well, then add water gradually (a little at a time) to the flour and knead it to make a soft and pliable dough. Knead the dough for a couple of minutes until the dough is smooth and elastic. Cover the dough with a damp cloth and keep it aside for 10 minutes.
  • The next step is to prepare stuffing for the paratha. Heat the oil in a pan or kadhai, add onion and saute for 2 minutes. Add garlic and salt, cook it for a couple of minutes.
  • Add grated broccoli and saute for 2 minutes. Add turmeric powder, red chilli powder, coriander powder, cumin powder and garam masala powder. Cook the spices and broccoli for 3-4 minutes. Switch off the flame, add boiled potatoes and amchur powder. Mix it well with the broccoli mixture. Keep it aside and let it cool down completely. Divide the broccoli stuffing into equal portions.
  • Knead the dough again for a couple of minutes and divide it into equal portions.
  • Dust the dough in dry wheat flour, flatten it with your finger and roll it in a small circle of about 3 inches in diameter.
  • Take a portion of stuffing and place it in the centre. Next, pleat the sides of the paratha dough and bring them together in the centre. Press the stuffed paratha dough down and gently flatten it with your fingers.
  • Dust the stuffed dough in some flour and roll it gently, applying very little pressure. Roll it to desired thickness.
  • Heat a griddle or tawa on medium heat and place the rolled broccoli paratha. Let it cook on medium heat for about 20 to 25 seconds. When it is partly cooked, flip the paratha.
  • At this stage, apply a teaspoon of ghee or oil and spread it around on the paratha. Flip again and spread a little more ghee; keep pressing the paratha around the edges. Cook the paratha evenly from both sides and proceed similarly with the remaining portions of paratha dough and filling.
  • Serve the hot broccoli Paratha with pickle, curd and salad.
