Bel fruit (Aegle marmelos), known by many names like Bael, Bengal Quince or Wood-Apple, etc., is native to India and Southeast Asia. Bel fruit has a distinct aroma and tastes sweet when ripe. It's typically eaten fresh, dried or consumed in Sharbat form. Sharbat made of Bel is one of the healthiest and most relished summer drinks in India. The extract or pulp of this fruit is used to make this delicious drink. This traditional drink is made in the households of India, often using different and unique recipes.
This natural coolant drink not only quenches your thirst but also provides instant energy and keeps you full for a long time, thanks to its fibre content. Other than being a tasty cooler, Bel fruit has many medicinal properties, blood sugar control, blood purification, good for digestion, to count a few. It is also good for liver and kidney health as it removes toxins from the body.

Ingredients
  

  • 500 gm Bel (Wood-apple) or 1 small
  • ¾ cup Brown Sugar
  • 5 cups Water
  • 1 tsp Black Pepper Powder
  • 1 tsp Black Salt
  • Ice Cubes a few
  • Mint Leaves for garnishing

  • First, take a bel fruit and hit it with a rolling pin (belan) all around to crack it open. Scoop out the soft, mushy brown pulp from inside with the help of a spoon and put it in a large bowl.
  • Add 2 cups of water to the bel pulp, and let it soak for half an hour.
  • Mash the bel pulp and water mixture thoroughly with a potato masher or vegetable masher. Add 2 cups of water and mix it well. Strain the mixture through a fine strainer. With a spoon, stir it continuously so that the mixture strain well. Discard the seeds and rough fibres.
  • Add the rest of the water, sugar, black pepper powder and black salt to the filtered juice. Mix it well till the sugar dissolves completely. You can use Jaggery powder or cane sugar in place of sugar.
  • Shift the juice into a large jar and keep it in the refrigerator. This juice stays good for 2-3 days in the fridge.
  • Serve the chilled sharbat with some ice cubes and fresh mint leaves.
