Aam Panna, a refreshing summer drink made of green raw mango pulp, is famous for its cooling properties. This summer cooler is not only quenching the thirst but also prevents the body from excessive loss of minerals during summer due to excessive sweating. Green raw mango used in this drink is a rich source of Pectin, Vitamin B1 and B2, Vitamin C and Iron. It is prepared during summers when raw mangoes make an appearance in abundance, and the temperature starts soaring. This sweet and tangy summer cooler drink is prepared from green raw mango pulp, mint, sugar, roasted cumin (jeera) powder and an assortment of other spices.
Aam Panna can be made either by boiling or roasting the raw mangoes on the direct flame. Both methods give a distinct flavour to the drink. The amount of sugar in this recipe can be reduced or increased according to the taste. Sugar can be replaced by jaggery or cane sugar if you wish. It’s a freezer-friendly recipe. It stays for good for 2 months. Sugar and lemon juice added in this recipe acts as a preservative.

Ingredients
  

  • 300 gm Raw mango
  • 300 gm Sugar
  • 7-8 Green Cardamom
  • 2 tsp Black pepper corns
  • 2 tsp Ginger (grated)
  • 2 tsp Black Salt
  • 2 tsp Roasted Cumin
  • 1 tsp Salt
  • 3 tbsp Lemon Juice
  • 1 Cup Mint Leaves

Instructions
 

  • Boil one cup of water in a pan. Add the peeled and cut mangoes, ginger and cardamom pods. Cook it on a low flame till the mangoes turn soft.
  • Let it cool down then and purée it in a grinder with ginger, black pepper, cardamom, roasted cumin powder, black salt, salt and mint leaves into a fine paste.
  • Take one cup of water with sugar to make sugar syrup. Let it simmer on low flame till sugar dissolves completely. Now add mango mixture and lemon juice in it.
  • Cook it on low flame for 10 minutes or till it reaches the consistency of one thread. The mixture will turn gooey and thick in texture and consistency.
  • Let this mango mixture cool down completely, then strain the prepared concentrate through a sieve. It can be stored in the refrigerator for up to 1-2 months.
  • Aam Panna concentrate is ready; Store it in a sterilised glass bottle in a refrigerator.

Serving

  • In a glass of cold water, add 2-3 tablespoons and stir it well. Add some ice cubes and garnish them with lemon wedges and mint leaves. It’s ready to serve.
