Ingredients
- ¾ cup Unsweetened Desiccated Coconut
- ½ cup Unsalted Butter
- ½ cup Caster Sugar
- 1 cup All-purpose flour (Maida)
- ½ tsp Baking Powder
- ½ tsp Vanilla essence
- 1 tbsp Milk
- ¼ tsp Salt

Instructions
- Preheat the oven to 180 C. Line the baking tray with parchment paper or grease it with butter; keep it aside.
- Take a bowl, add butter (preferably at room temperature) and castor sugar. Whisk together butter and sugar till light and fluffy.
- Add vanilla essence and mix it well.
- Sift together flour, baking powder and salt. Fold the dry ingredients with a spatula and mix them well with butter and sugar mixture.
- Add desiccated coconut and mix it well. Combine the dough (don’t knead the cookie dough), add milk and make a smooth dough.
- Take a tablespoon of cookie dough, roll it into small balls, flatten it with your fingertips into medium-sized rounds, and place them on the baking tray, leaving a gap for 2 inches between each cookie.
- Bake into the preheated oven for 12-15 minutes or till the edges start browning.
- Remove from the oven, let it cool down completely on the wire rack.
- Serve the cookies and store them in an airtight container.
